About comethinkin

Welcome to ComeThinkIn.com, the new blog of NoMI at Park Hyatt Chicago. Our goal is to provide a closer look, for Chicagoans and visitors alike, at the personalities who are the driving forces behind the restaurant. We’ll offer restaurant news, dining updates, wine notes and share photos among a host of other topics. You will also be able to look to our blog to gather insiders’ perspectives on what makes Chicago one of the most iconic cities in the United States. Who better to kick off our blog than new Executive Chef Ryan LaRoche. When we reopen in June, Chef LaRoche will be overseeing the reinvented seventh floor. In essence he will be serving as the quintessential host welcoming guests into the heart and hearth of Park Hyatt Chicago home.

Chef Paul Dobroski Wins “The Good Taste” Series Culinary Competition

Congratulations to Park Hyatt Chicago’s Chef de Cuisine, Paul Dobroski, on winning Hyatt’s “The Good Taste” Series Culinary Competition today for the Midwest region! Featuring 10 chefs from Hyatt properties throughout the country, participants engaged in three rounds of competitions including a breakfast round, a lunch or dinner round, and a round focused on a children’s menu. We spoke with Chef Paul to discuss his experience.

What did you prepare for the competition today?

Category 1: Breakfast Entrée
Farm Egg Lorraine
Nueske’s ham, ruby arugula, smoked tomato hollandaise

Category 2: Lunch/Dinner Entrée
Lake Eerie Jumbo Walleye
Spring squash, apricot and almond jam, sweet garlic emulsion

Category 3: Children’s Meal
“Ants on a Log”
Nitrate-free baked turkey corn dog with toasted sweet potato chips

What was it like competing against your colleagues?

It was nerve-wrecking and comfortable at the same time. I’m very excited about the new relationships that are coming out of this experience.

What’s the next step?

The Good Taste Series is a regional competition. In November, the top eight contestants from each region will gather at Andaz Maui at Wailea for the final round.

What was your inspiration behind these meals?

I have a group of family members, colleagues and chefs whom I’ve admired and received constant support from throughout my career. My originality is a product of what I’ve learned from them, like taking an inch from each of the 12 people and making a foot.

Congratulations, Paul!

Summertime Music in Chicago

The beauty of visiting Chicago in the summer season is that the city truly comes alive – there is a myriad of options for sightseeing, dining, and a number of festivals for everyone to enjoy. A scene that becomes particularly vibrant is the variety of options for live music available for visitors and residents alike.

  • Music Festivals: Chicago is home to a variety of music festivals; from the gargantuan musical experience of Lollapalooza, to the beachfront festival North Coast, to a festival geared towards the indie music scene, Pitchfork, the city presents visitors with a variety of options for musical entertainment that spans for a duration longer than one evening of music.
  • Taste of Chicago (July 9 through July 13, 2014): The city’s annual festival offering delectable culinary bites from a range of Chicago establishments also includes a stellar lineup of musical acts. Tickets can be purchased for a seat closer to the stage, however, each concert is free to the public for lawn seating. Headlining acts for this year’s Taste of Chicago lineup include AWOLNATION, Janelle Monae, Nickel Creek, Jeff Tweedy, and Aloe Blacc.
  • Downtown Sound Series: New Music Mondays (June 2 through August 4, 2014): Each Monday at 6:30pm beginning on June 2, excluding the week of July 28, visitors can gather on the lawn of Millennium Park’s Jay Pritzker Pavilion to listen to a free concert by up-and-coming musical acts. Showcasing a range of musical genres, the concerts feature talent that has been emerging throughout the year.
  • Grant Park Music Festival (June 11 through August 16, 2014): Free concerts offered on various evenings throughout the summer showcase exquisite collaborations within the classical music genre. From an evening focused on the music of Tchaikovsky, to Romeo and Juliet, to orchestral music accompanying footage originally featured in the BBC/Discovery Channel series, The Blue Planet, there is a variety of instrumental music offerings for all to enjoy.
