Who better to kick off our blog than new Executive Chef Ryan LaRoche. When we reopen in June, Chef LaRoche will be overseeing the reinvented seventh floor. In essence he will be serving as the quintessential host welcoming guests into the heart and hearth of Park Hyatt Chicago home.

“I’m an avid photographer. I’m always shooting whatever and wherever when I’m travelling.” Recently, Deagueros has visited the American Southwest, Vegas, California, Oklahoma, Mexico and New York.

If he could bring anyone to NoMI, who would it be and why:
Czech author Milan Kundera, his favorite novelist. “He’s just had such a powerful artistic influence on me.”

Celebrate National Tequila Day with a Special Cocktail Guide from NoMI Kitchen!

If you “take life with a grain of salt…a slice of lime, and a shot of tequila,” then you’ve probably got a spot in your heart (and your mouth!) for this celebrated distilled beverage which is crafted from the blue agave plant of Mexico.

In honor of National Tequila Day, NoMI Lounge Manager, Sergio Campos, is offering up his expertise to bring you a few unique and exquisite ways to toast to Tequila this year.

“Tequila is a special spirit that’s festive yet has a unique versatility. It has the power to bring people together!” notes Sergio on the popular libation.

Check out two twists on the traditional margarita along with a foolproof recipe for the classic concoction. Enjoy!

The Classic One

Ingredients:
1.5 ounces Cazadores Blanco Tequila
1 Egg White
3/4 ounce Lime Juice
1/2 ounce Pierre Ferrand Dry Curacao
1/2 ounce Agave Nectar
1/4 ounce Orange Juice
2 drops Orange Bitters

NTD - classic 2

Preparation:
Combine Cazadores Blanco Tequila, egg white, lime juice, Pierre Ferrand dry curacao, agave nectar, orange juice and orange bitters into a cocktail shaker. Shake well. Strain contents into a cocktail glass.

“NoMI’s version of the traditional margarita is dry and easy to drink. The orange juice and dash of orange bitters are a great pair with the acidity of the lime juice and balance out the flavors for a smooth sipping experience.”

The One with a Kick

Ingredients:
1/2 Roasted Jalapeno
1.5 ounces Cazadores Blanco Tequila
1 Egg White
3/4 ounce Lime Juice
3/4 ounce Grapefruit Juice
1/2 ounce Pierre Ferrand Dry Curacao
1/2 ounce Aperol
1/4 ounce Agave Nectar
Grapefruit peel for garnish

NTD - kick 2
Preparation:
Remove seeds from the jalapeno, and combine with Cazadores Blanco Tequila, egg white, lime juice, grapefruit juice, Pierre Ferrand dry curacao, Aperol and agave nectar into a cocktail shaker. Shake well. Strain contents into a cocktail glass and garnish with grapefruit peel.

“I love this combination of bitterness from the grapefruit with the smokiness and spiciness of the roasted jalapeno. It’s an adventure for the taste buds!”

The Floral One

Ingredients:
1.5 ounces Cazadores Blanco Tequila
1 Egg White
3/4 ounce Lemon Juice
1/2 ounce Kalani Coconut Liquer
1/2 ounce Rothman & Winter Creme de Violette
1/4 ounce Lemon Syrup
2 drops Rose Water
Edible flowers for garnish

Preparation:
Combine Cazadores Blanco Tequila, egg white, lemon juice, Kalani, Creme de Violette, lemon syrup and rose water into a cocktail shaker. Shake well. Strain contents into a cocktail glass and garnish with edible flowers.

“The combination of egg whites, agave nectar and lime juice to create sour mix dates back to pre-prohibition days, making it a classic component of any delicious cocktail. The egg whites give these margaritas a frothiness that is soft to the taste and create a beautiful ombre color.”

Trio of ice cream: Vanilla Bean, Pistachio and Gianduja Swirl. “It’s flavorful, simple and delicious and the perfect treat to cool down in the Summer.”

Going to the beach. “It’s not Summer until you get in the Lake!”, says Syd.

Something you might not now about her:
She speaks Hebrew because she went to Jewish grade school and Russian because she studied Languages and Literature in college.

If she could bring anyone to NoMI, who would it be and why:
She would bring Judy Contino, Chef and Owner of Bittersweet Bakery in Chicago, whose shop inspired Syd to pursue pastry. “She gave me my first kitchen job at 14, doing all the prep for the bakery,” Syd says. “I’d love to show her how far I’ve come in pastry.”

Behind the Swinging Doors: NoMI Petite Mustard Greens Salad Recipe

Last week we gave you a peek of shaved French Breakfast Radishes that are used in our signature Petite Mustard Greens Salad. Now we’re giving you the recipe from behind the swinging doors of our kitchen.

When creating this salad Sous Chef, Keith Potter, was inspired by the seasonality of mustard greens which are at their freshest during the Spring and Summer Months.

Ingredients:

Baby Mustard Greens & Ruby Streak Mustard Greens (from Werp Farms)
Curly Kale
French Breakfast Radishes (from Werp Farms)
Jalapenos (pickled in-house at NoMI)
Toasted Sunflower Seeds
Barrel-Aged Sheep’s Milk Feta Cheese
NoMI’s House-Made Brown Butter Vinaigrette
Lemon
Wundra Flower
Espelette Pepper

Preparation:

Combine Baby Mustard Greens, Ruby Streak Mustard Greens, and Curly Kale
Thinly shave French Breakfast Radishes and add to mix
Adorn with lightly pickled Jalapenos, Toasted Sunflower Seeds, Feta Cheese

Dress with NoMI’s house-made Brown Butter Vinaigrette

For garnish, dredge sliced Lemon in Wundra flower (it has an anti-caking agent that will give the lemons a crisp, golden-brown coloring) and deep fry at 350°.
